Smoke Shack, AJ Bombers and Holey Moley Coming to Mayfair Collection

Milwaukee-based Hospitality Democracy announced plans to open three popular local restaurants at The Mayfair Collection in Wauwatosa according to a release from the company. Hospitality Democracy, has executed a lease for a 6,280-square-foot freestanding building in what is effectively “center stage” of The Mayfair Collection, that will house three of the restaurant company’s concepts: AJ Bombers, Smoke Shack, and Holey Moley Coffee + Doughnuts.

“We could not be more pleased to join in the retail excitement that is happening in Wauwatosa. We feel our restaurants are the perfect addition to the current offerings at The Mayfair Collection. Our new locations are perfectly placed, just in front of the new Hilton Homewood Suites hotel and incorporate an attached parking garage for up to 100 vehicles,” said Joe Sorge of Hospitality Democracy.

Smoke Shack—a popular barbecue spot located in Milwaukee’s Third Ward, regularly voted “Milwaukee’s Best Bbq”—is planned for the eastern half of the building. Designs for the Wauwatosa restaurant include a lively seasonal outdoor patio and bar area built with reclaimed barn wood in a rustic aesthetic akin to Smoke Shack’s original outpost. Guests of the restaurant will enjoy certified humanely raised meats that are dry rubbed, slow smoked to perfection and paired with regional housemade barbecue sauces and sides with a delicious selection of cocktails. There will also be several parking spots available for pick-up and catering orders just outside the doors of Smoke Shack.

AJ Bombers—the burger bar known for its “p-nuts”, burgers and beer—is a local institution with a location in downtown Milwaukee, downtown Madison and seasonal outposts at Miller Park and at Summerfest. AJ Bombers has also received national acclaim with the restaurant’s Milwaukee Burger declared the winner of the Travel Channel’s FOOD WARS and their Mad ‘Sconnie voted “Madison’s Best Burger” via Madison Magazine. The Wauwatosa location will feature the same eccentric “Rube Goldberg meets Willy Wonka and the Chocolate Factory” design and functionality as the original restaurant. Several parking spots will be available for pick-up and catering orders.

The third restaurant by Hospitality Democracy, Holey Moley Coffee + Doughnuts, will offer visitors to The Mayfair Collection scatch-made doughnuts made from whole, quality ingredients with a range of styles including cake, old-fashioneds, yeast raised, filled, fritters and doughnut holes. Holey Moley offers a
multitude of creative and seasonal flavors as well as a wide variety of vegan and gluten-friendly options. Additionally, the Wauwatosa location will also feature Holey Moley’s signature Doughnut Custard Sandwiches. Holey Moley’s original location opened in 2014 inside of The Landmark Building in
Milwaukee’s Third Ward neighborhood. The Wauwatosa location will also include on site parking available for pick-up and catering orders just to the east of the entrance of Holey Moley.

The three restaurant concepts by Hospitality Democracy are scheduled to open over the late summer and fall of 2016.
